Bolay Fresh Bold Kitchen is a Florida-born fast-casual bowl concept focused on vibrant, health-forward meals. Founded in 2016 in Wellington, FL, by Outback Steakhouse co-founder Tim Gannon and his son Chris, Bolay centers around customizable “bols” with bold flavors and fresh ingredients.
The concept has 23 locations with two additional locations opening in 2025. Bolay offers a nutritious, 100 percent gluten?free menu, with vegetarian? and vegan?friendly meal options, allowing diners to build their own bowls or choose from chef?curated options.
