Posted by: The menu at Chili’s is heating up with its latest spicy creation! The popular restaurant spent nearly two years crafting its new Southwestern Queso, so you know it must be good.
The Southwestern Queso — replacing the Skillet Beef and White Skillet quesos on the menu — blends American and cheddar cheeses with fire-roasted green chilies, onions and a hint a lime for a bold flavor.

There are plenty of ways to enjoy the new Southwestern Queso:
Dip Chili’s famous Sizzlin’ Fajitas in the creamy queso.
Try Southwestern Queso as a standalone app or as part of the Dip Trio.
Savor it in the new Chicken Bacon Ranch Nachos.
Add it to any entrée on the menu for a cheesy upgrade.
And, from Oct. 7 to 21, 2025, Chili’s is giving away the new Southwestern Queso and chips for FREE at participating locations, so customers can experience the new cheesy creation for themselves.
